Whenever I am making meatballs, I go for either beef or pork meat. This time I found ground turkey meat, so I decided to give it a go. To tell you the truth, my family and I have never been big turkey eaters. Since I am in the experimenting mood these days, I also went for creamy spinach as a side dish, which resulted in a casserole!
Sometimes a kitchen fail turns out to be super-delicious recipes in the end. This cream spinach was supposed to be an excellent side dish, initially. However, I started preparing the meal before realizing I have just 300g of spinach! It was already too late for going back to the supermarket, so I had to make the most of it.
Casserole seemed like a logical next step. I spread the meatballs on the bottom, covered with spinach cream I previously cooked for a few minutes and added an egg on top. This part is entirely optional; you can serve the meatballs with creamy spinach as it is.
Moral of the story – never throw away food, you can recreate it into something else more often than not.
EDIT: I’ve made this creamy spinach with chicken breasts, pork chops and it is still one of my favorite side dishes. Since summer is here, I rarely use my oven, so casserole is not an option. I double the amount of spinach, and I have a tasty side dish.
