3 eggs, separated
⅛ teaspoon cream of tartar
3 tablespoons cream cheese, softened
"Cloud bread" or “oopsie bread" is fluffy and delicious low-carb bread substitute made of only 3 ingredients and in less than 30 minutes.


1.Preheat the oven to 150°C / 300°F
2.Separate the eggs and add cream of tartar to the whites and whip until they start making little peaks
3.Mix the yolks with cream cheese until they combine evenly
4.Fold half of the egg whites into the yolks slowly and carefully
5.Add the other half of egg whites and fold again until incorporated.
6.Line a baking sheet with parchment paper and place 8-10 dollops of the mixture on the tray.
7.Bake for 30 minutes or until golden. Start checking after 20 minutes.
8.Take your cloud bread out of the oven and let it cool a bit for some 15 minutes. If you want it completely cold, it should rest for an hour. Enjoy!

Cloud bread is probably the quickest and simplest substitute to regular wheat bread. It also goes under the name “oopsie bread”. It is made with just 3 ingredients and you can have it in 30 minutes or so.

In all honesty, this is not an actual bread, since you use just eggs, cream cheese and cream of tartar to make it. So, don’t be disappointed when you get an omelet-tasting bun. But it does stop the cravings for sandwiches and you can actually use it to make many other delicious meals with it (cloud pizza, savory layer cake, chicken roll cake – just to name a few).

If you don’t have time for baking, cloud bread is just what you need. You can store it in the fridge for 3 days minimum and it tastes the same. When you are running late, just take it out of the fridge and you are good to go!
