170 g chocolate, unsweetened, melted
90 g butter, unsalted, room temperature
4 tbsp sweetener, powdered (adjust to taste)
30 g almond flour
3 eggs, room temperature
a pinch of salt
1 tbsp cocoa powder, Dutch process (preferably)
If you are a chocolate lover, you must have eaten lava cake. It is actually a very keto-friendly dessert, and a true feast for the senses!


1.Preheat the oven to 190 degrees Celsius. Melt the chocolate and butter over the water bath or in a microwave. While they are melting, combine dry ingredients in a mixing bowl.
2.Use your hand mixer to mix dry ingredients with eggs. Mix until you get a smooth mixture.
3.Once your chocolate and butter melt, let it cool a bit and add it to the other ingredients. Mix it well using a hand mixer for a couple of minutes until you get a creamy dough.
4.Grease your muffin molds and (optional) dust it with cocoa powder. Fill each mold with batter about 2/3.
5.Baking is crucial. Read Baking tips in the text below. Bake for 10-11 minutes in the middle of the oven.
6.Lava cake should be similar to a muffin on the outside, but moist, juicy, even liquid in the inside.
7.Once the cakes are baked, let them cool down before serving.
8.Serve lava cake with some berries, whipping cream, vanilla ice-cream, or alone. This cake does not need any enhancements. It is perfect on its own.

Lava cake (or lava muffins) is one of the favorite keto desserts of many. The reasons are simple. It is basically a keto dessert, with a few minor adjustments, and it is made in less than 15 minutes.

This is one of the simplest chocolate-related recipes, and indeed the fastest! You can have it on your table in 15-20 minutes!

Baking tips:

Adjust the time of bakig depending on the size of your muffin mold and how “strong” your oven is. For slightly smaller molds, bake lava cakes up to 10 minutes. If you have regular big muffin molds, bake up to 11 minutes. Also, with smaller molds, you can get 9-10 cakes instead of 8. My suggestion for lava cake is if you are unsure, always go for underbaking rather than baking for even 30 seconds longer. Otherwise, you will end up with (super delicious) very moist chocolate muffins.
