Keto Beginner’s Fathead Pizza Cups

Ingredients

DOUGH:
150 g mozzarella, shredded
150 g almond flour
75 g cream cheese
2 tsp xanthan gum
1 packet instant yeast
1 egg, scrambled
salt and pepper
FILLING:
8 tbsp homemade marinara sauce
40 g mozzarella or cheddar, shredded
80 g Italian sausage, cooked
20 g parmesan, grated
These fathead dough pizza cups can make a great snack or meal. They are super tasty, satiating and this dough is made with yeast - for extra fluffiness

Instructions:

1.Preheat the oven to 350°F / 175°C.
2.Mix almond flour, xanthan gum, yeast and seasoning in a large bowl.
3.Microwave mozzarella and cream cheese until melted. Once melted, add to flour and egg mixture and mix well.
4.If the dough is too stiff, microwave for 30 second and knead mixture for 5-10 minutes until fully combined, You can use your hands or a dough hook.
5.Separate the dough into 8 balls using wet hands.
6.Flatten the dough balls so that you can cover the outer side of a muffin mold so that it is cup-shaped.
7.When you have all the cups set, pop them into the oven and bake for approximately 15 minutes.
8.Once they start turning golden, take them out, remove the dough cups from the muffin molds and fill them with marinara, sausage and cheese. Top each cup with some parmesan.
9.Put the filled cups back into the oven for 10-15 more minutes, or until they turn golden brown. Once they are fully baked, let them rest for 5-10 minutes and serve them warm.

One of the things that motivated me to start writing this blog was wanting to make sure more people know that going low-carb doesn’t mean that you have to give up your favorite food and eat the same things over and over. Healthy eating doesn’t have to be complicated, and you don’t need to feel hungry to lose weight. This recipe for simple pizza cups proves my point.

I know that most of us don’t have a lot of time to spend in the kitchen every day. That is why I love recipes that are quick and that you can make with ingredients you always have in the pantry. This is one of my favorites!

When I discovered that fathead dough is keto-friendly and is a perfect replacement for bread, I started using it in a variety of dishes. And what better way to combine healthy, quick, and delicious than pizza! I call them pizza cups, but you can shape them any shape you want – a calzone, a roll, classic pizza pocket …it’s all the same.

This recipe is a bit of a twist on the regular fathead dough you’re probably used to. The secret ingredient? It uses yeast! And that makes a big difference! I love that you can fill them with anything you like and top it off with your favorite sauce. Even sweet fillings would work. The possibilities are endless, and I hope you love them just as much as I do. You can also make them in a sandwich maker.

The yeast makes the dough rise of a little bit more, and the xanthan gum made the crust more sturdy. Just keep in mind that because of the cheese, they are packed with calories and super filling.
