I know that most of us don’t have a lot of time to spend in the kitchen every day. That is why I love recipes that are quick and that you can make with ingredients you always have in the pantry. This is one of my favorites!
When I discovered that fathead dough is keto-friendly and is a perfect replacement for bread, I started using it in a variety of dishes. And what better way to combine healthy, quick, and delicious than pizza! I call them pizza cups, but you can shape them any shape you want – a calzone, a roll, classic pizza pocket …it’s all the same.
This recipe is a bit of a twist on the regular fathead dough you’re probably used to. The secret ingredient? It uses yeast! And that makes a big difference! I love that you can fill them with anything you like and top it off with your favorite sauce. Even sweet fillings would work. The possibilities are endless, and I hope you love them just as much as I do. You can also make them in a sandwich maker.
The yeast makes the dough rise of a little bit more, and the xanthan gum made the crust more sturdy. Just keep in mind that because of the cheese, they are packed with calories and super filling.
