Fat Head Dough – Simple & Versatile


150 g mozzarella, shredded
50 g cream cheese, room temperature
1 egg, room temperature
150 g almond flour
1 tbsp psyllium husk (if you don't have it, add 1 tbsp more of almond flour)
1 tbsp baking powder
If you are on the ketogenic or low-carb diet you definitely know what and how significant fat head dough is. If not, you've got to check this out!


1.Combine shredded mozzarella and cream cheese in a microwave safe bowl. Microwave it for about 45 seconds on medium heat, stir and put it back in if necessary for 15-20 seconds more.
2.Put the mixture of melted cheeses into a food processor, add an egg, and mix until you get a homogeneous mass.
3.Combine dry ingredients and add them to the mix. It is best to use a spatula or even your hands. Mind that it will be pretty sticky dough!
4.Wrap the dough into film and put it into the fridge to cool so you can shape it (using parchment paper)
5.After it cooled in the fridge for 20-30 minutes, take it out, and shape it as you like.

Even though I did a serious research on the ketogenic diet for months, I didn’t hear anything about fat head dough. But right after I started living a ketogenic life, it somehow started occurring everywhere! Fat head empanadas, pizza dough, bagels, crackers, cinnamon rolls etc. were everywhere! Therefore, I had to try it out.

It is a fairly simple dough to make. Fat head dough consists of just a few ingredients you probably always have around the kitchen pantry. You can make savory but also sweet, baked or fried dishes with it. The possibilities are endless.

The dough itself can be altered depending on the dish you are making. Here you will find the basic recipe. I will be posting more recipes involving fat head dough in the future. You can see the pictures of several variations of this dough (all savory).

* Preparation time of the dough itself is about 15 minutes, while the cooking/baking can take more or less than 30 minutes, depending on what you are making.

**Calories are calculated for the whole batch. Depending on what you are making, divide the total number with the number of servings.
