Zucchini Soup with Goat Cheese

Ingredients

1-2 onions, small, diced
20 ml olive oil
2 big zucchinis, cut in big chunks (2x2 cm)
1/4 celeriac root (small one), cubed
1/2 parsley root (small one), cubed
water
50 ml heavy cooking cream
fresh black pepper
salt
50 g goat cheese
Imagine a cold winter day. Then imagine a perfect wholesome meal to warm you up. I know what I see. Creamy low-carb zucchini soup with goat cheese!

Instructions

1.Heat the olive oil in a large pot over medium-high heat. Sauté the onion for 2 to 3 minutes (until softened).
2.Cut the vegetables and add them to the pot. Add water to cover the veggies and put the lid on top.
3.Let it cook for 20 minutes, Add herbs and spices, and some more water if necessary.
4.Use any kind of blender that you have. I find my stick blender the easiest. Blend until you get nice and smooth cream soup.
5.Slowly and gently stir in the heavy cream and lemon juice, some more fresh pepper and salt if needed. Let it simmer for 5-10 minutes.
6.Serve the soup in a bowl with some fresh goat cheese, black pepper, and additional herbs or spices of your liking.

This is one of those super simple recipes. You put all the ingredients into a pot, and in an hour or so – voila! Creamy zucchini soup, or potage – as you like it, is a portion of great comfort food, perfect for upcoming colder days.

I’m always on the look for easy, healthy and delicious recipes and this is one definitely is all three! Since I was a child, this kind of soup has been one of my favorites. I usually have all the ingredients necessary for it and can make it in a bit. It’s great if you don’t have that much time for cooking, but still want to eat quality food.

I used zucchini for the base in this soup, but also added some celeriac root, parsley, and other aromatic vegetables. I did not use vast amounts of it since root vegetables are usually higher in carbs, but just enough to give it a bit of flavor and aroma.

You can add cauliflower as well. I’ve tried it, but I am not a big fan of it, so I skip it. If you are on a low-carb diet, a small carrot can give it a beautiful color, so go for it.
