Muffins are everyone’s favorite dessert. You can make so many variations and they can be eaten whenever and wherever! Coconut and raspberry proved to be a good combo in the past. These muffins just reminded me of that!
When you are making something sweet for your guests, it is only natural that you want to make sure that everybody is satisfied. In such a situation – muffins can be your solution. But the reason why I really love them is that you can alter the recipe however you like! There are a lot of variations, meaning you can avoid ingredients you are allergic to or simply don’t like. On the other hand, you can experiment with foods you prefer or want to introduce into your diet.
Trying out different versions of the batter, you can discover a combination that is ideal for you. And for me, this is the one! I really like the combination of raspberries and coconut. And a tip for light-textured muffins: be careful not to over-mix the batter. If adding choc-chips or fruit, mix until just combined.
A good friend of mine showed me some of her savory combinations of this simple, yet yummy baked product! But for that, you have to further change the elements. My personal favorite is the one with spinach, tomato, and feta cheese.
Long story short – muffins are the basis for a wide spectrum of colorful alterations of an already great recipe!
