Low-Carb and Guilt-Free Eggplant Lasagna

Ingredients

150 g eggplant, sliced thinly lenghtwise
150 g tomato, sliced thinly
300 g minced beef
100 g smoked bacon (optional), diced
150 g cheese, grated
150 ml cooking cream
20-30 g Parmesan, grated
Herbs and spices of your choice
Lasagna can be low-carb? Hell yeah! After just a few adjustments, you can have your keto-friendly, low-carb and guilt-free lasagna.

Instructions

1.Preheat the oven to 200°C / 400°F
2.Cut the eggplant and tomato in thin (1 mm thick) strips/slices lengthwise
3.If you choose to use bacon, dice it into small cubes and put it in a frying pan
4.Let the bacon fry for a minute and then add minced beef
5.Season the meat with salt, pepper and herbs of your liking and leave it saute for about 10 minutes
6.Start building your lasagna in a 4x8 pan, bottom to top: eggplant, sauted meat mix, tomato, cooking cream, cheese
7.Repeat the layers until you are out of ingredients and finish with cheese and Parmesan on top
8.Cover the pan with aluminum foil and make small holes in it so that liquids can evaporate and it does not overcook
9.Let your lasagna cook in the oven for some 50-60 minutes
10.10-15 minutes before it is done cooking, take off the foil and lower the temperature
11.After it is done cooking, take it out of the oven, cover it again and let it cool down for some 20-30 minutes

First lasagna recipe was found in Britain in a cookbook that dates back to the 1390s. Italians probably embraced the dish as their own perfecting its layers of deliciousness.

But did you know that lasagna can be low-carb? Hell yeah! After just a few adjustments, you can have your keto-friendly, low-carb and guilt-free lasagna! Today I am sharing with you my Eggplant Lasagna recipe which was a huge success in my non-keto family.

I don’t think I know a person not loving Italian cuisine. All that delicious carbs in various forms are really hard to resist – pizza, pasta, gnocchi, ravioli, risotto, and of course let’s not forget sweet delicacies like tiramisu, famous Italian gelato, panettone bread or canolli… Ok, I went too far, back to our recipe.

Today we will stick to savory dishes, and lasagna is definitely a favorite of the masses. I still haven’t discovered a decent substitute for pasta itself (in its numerous forms), but certain Italian dishes do have their keto-friendly versions. I will share with you my classic beef (eggplant) lasagna recipe which was a great success in my family.
